Khichdi — The Ayurvedic Healing Meal
Khichdi is the quintessential Ayurvedic comfort food — a simple, nourishing one-pot meal of rice and mung dal that is easy to digest and balances all three Doshas. In the Rishi tradition, Khichdi is considered the ideal food during fasting, illness, detox, and for daily nourishment. It is Sattvic, wholesome, and deeply healing.

Ingredients
Instructions
Step 1: Prepare the Tadka
Heat ghee in a heavy-bottomed pot. Add cumin seeds and let them splutter. Add hing, curry leaves, grated ginger, and turmeric. Stir for 30 seconds until fragrant.
Step 2: Cook the Grains
Add the drained rice and dal. Stir gently to coat in the spices. Pour in 4 cups of water and add salt. Bring to a boil.
Step 3: Simmer
Reduce heat to low, cover, and simmer for 20-25 minutes until the rice and dal are soft and the consistency is porridge-like. Stir occasionally to prevent sticking.
Step 4: Serve
Garnish with fresh cilantro, a squeeze of lemon, and a spoonful of ghee on top. Serve warm. Best eaten fresh — avoid reheating.
Ayurvedic Notes
Mung dal is the most easily digestible legume in Ayurveda. Combined with rice, it provides complete protein. Ghee kindles Agni without aggravating Pitta. This meal is prescribed during Panchakarma detox and is suitable for all Prakriti types.
